I have already backed up everything I need from my 6S+ and set up my new 7+. Is there anything I need/should do with my 6S+ besides just wiping it before I sell it? Does it matter if I sign out of iCloud, etc.? How do I get it to stop displaying on find my iPhone?

It matters a great deal about signing out of iCloud.

And yes its important to sign out of iCloud, otherwise the new owner cannot set it up themselves without your apple Id and password.
